German Potato Salad
- 1/4 lb. bacon slices
- 8 lb. potatoes, boiled, peeled and diced
- 1 small onion, chopped
- 2 stalks celery, diced
- 1/4 c. water
- 1 Tbsp. cornstarch
- 1/4 c. vinegar
- 2 Tbsp. sugar
- pepper and salt to taste
- 1 Tbsp. bacon fat
- Fry bacon until crisp.
- Drain off fat and reserve for later. Crumble bacon.
- In large bowl toss potatoes, bacon, onions and celery.
- Combine enough water to cornstarch to make a smooth paste, set aside.
- Heat remaining water in a pan, add sugar, salt and vinegar.
- Next add 1 tablespoon bacon fat and pepper.
- Bring to a boil before adding cornstarch mixture and stir sauce until it is clear.
- Pour sauce over potato mixture.
- Warm in microwave oven until heated through.
