Beef & Barley Soup
- 2 cups stewing beef, browned
- 9 cups cold water
- 1 cup tomato juice
- 1 cup barley
- 12 cup onion, finely chopped
- 12 cup carrot, cut in very thin strips
- 3 beef bouillon cubes (optional)
- 1 teaspoon salt
- 13 cup celery, finely chopped
- Combine all ingredients in a large pot and simmer, covered, for 3 hours or until barley is tender.
- Taste for salt and adjust if necessary.
