Bara Brith Recipe

  1. Place the fruit, sugar, lemon zest and tea in a bowl and soak overnight.
  2. Pre heat the oven to 190C.
  3. Grease and line a 1kg loaf tin.
  4. Strain the fruit and reserve the liquid.
  5. Put the remaining ingredients in a bowl and add in the fruit and sufficient of the liquid to make a soft consistency.
  6. Pour into the prepared tin.
  7. Bake for 45 min or possibly till well risen and hard.
  8. Cold and serve with butter, if you like.
