Bara Brith Recipe
- 11 ounce Mixed fruit
- 3 ounce Brown sugar Grated zest of 1 lemon
- 13 fl ounce warm tea
- 13 ounce Wholemeal plain flour
- 2 tsp Mixed spice
- 2 tsp Baking pwdr
- 1 x Egg
- Place the fruit, sugar, lemon zest and tea in a bowl and soak overnight.
- Pre heat the oven to 190C.
- Grease and line a 1kg loaf tin.
- Strain the fruit and reserve the liquid.
- Put the remaining ingredients in a bowl and add in the fruit and sufficient of the liquid to make a soft consistency.
- Pour into the prepared tin.
- Bake for 45 min or possibly till well risen and hard.
- Cold and serve with butter, if you like.
