Cajun Sauce Piquant
- 5 Tbsp. oil
- 3 1/2 lb. meat (pork, beef, chicken, sausage or wild game)
- 2 c. chopped onions
- 2 garlic pods
- 1 small hot pepper
- 1 bell pepper
- 1 can whole tomatoes
- 1 can tomato sauce
- 1/4 lb. tasso
- 2 small cans mushroom sauce
- 1 Tbsp. Worcestershire sauce
- 1 Tbsp. pure lemon juice
- 1 1/2 tsp. salt
- 1 tsp. black pepper
- 1 tsp. red pepper
- 1 c. water
- 1 tsp. flour
- Put oil in a large pot; brown meat.
- Add the remaining ingredients except water and flour.
- Mix water and flour; add to sauce.
- Let cook on low heat for 1 hour or until tender.
- Stir every few minutes.
- Serves 6 to 8.
