Beet Raita
- 4 each beets cooked, diced or grated
- 1 teaspoon cardamom pods ground, plus more for garnishing
- 3 tablespoons mints freshly chopped
- 450 millilitres greek yogurt
- 1 teaspoon honey or sugar
- 1/2 each lemon juice
- 1 x salt to taste
- Mix beets, cardamon and 2 tablespoons of mint.
- Whisk yogurt, honey salt and a squeeze of lemon juice.
- Layer beet and yogurt in a serving dish.
- Garnish with remaining mint and a sprinkle of cardamon.
