Crispy Herb Chicken Recipe
- 2/3 c. Hungry Jack mashed potato flakes
- 1/4 c. grated Parmesan cheese
- 2 teaspoon parsley flakes
- 1/2 teaspoon onion pwdr
- 1/4 teaspoon garlic salt
- 1/8 teaspoon paprika
- Dash of pepper
- 1 whole chicken, quartered, skinned, rinsed and patted dry
- 1/3 c. butter, melted
- Heat oven to 375 degrees.
- Grease or possibly line with foil 15 x 10 inch jelly roll pan or possibly 13 x 9 inch pan.
- I prefer the 13 x 9 inch pan.
- In medium bowl combine potato flakes, cheese, parsley flakes, onion pwdr, garlic salt, paprika and pepper, stir till well mixed.
- Dip chicken pcs into butter.
- Roll in potato flake mix to coat.
- Place in greased pan.
- Bake at 375 for 60 min or possibly till chicken is tender and golden.
