Banana Cream Pie

  1. Mix flour, 1/2 cup of the sugar and salt in top of double boiler.
  2. Slowly stir in hot milk.
  3. Cook over direct heat until mixture boils and thickens, stirring constantly.
  4. Stir a small amount of hot mixture into well beaten egg yolks.
  5. Pour back into double boiler.
  6. Place over boiling water; cook for 2 minutes, stirring constantly.
  7. Remove from heat.
  8. Add vanilla.
  9. Cool until just warm.
  10. Slice bananas into pie shell.
  11. Pour cream mixture over. Beat egg whites until stiff; gradually beat in remaining sugar until smooth and stiff.
  12. Spread over pie.
  13. Bake in 400u0b0 oven for about 8 minutes or until golden brown.
  14. Yield:
  15. 6 servings.
