Eldress Bertha's Applesauce (Cooking Light)
- 5 12 cups apples, chopped & peeled (approximately 4)
- 12 cup water
- 14 cup sugar
- 1 12 tablespoons fresh lemon juice
- 1 cinnamon stick
- 14 teaspoon salt
- 1 dash almond extract
- Combine the first 5 ingredients in large saucepan.
- Bring to a boil.
- Cover and reduce heat.
- Simmer for 35 minutes until soft.
- Discard cinnamon stick.
- Using a potato masher, mash to desired consistency.
- Stir in salt and almond extract.
