Mini Fruit Pizzas
- 1 qt. PHILADELPHIA Original Cream Cheese, softened
- 1 cup sugar
- 2 tsp. vanilla
- 2 cups Assorted fresh fruit (sliced kiwis, strawberries, blueberries and mandarin orange segments)
- 1 cup apricot preserves
- 4 doz. round sugar cookies (3 inch diameter)
- Place cream cheese, sugar and vanilla in large bowl of electric mixer fitted with paddle attachement.
- Beat on medium speed until well blended.
- Spread each cookie with 1 heaping tablespoonful of the cream cheese mixture.
- Top evenly with fruit.
- Brush 1 tsp.
- of the preserves over fruit on each cookie.
- Serve immediately, or cover and refrigerator up to 24 hours.
