Chicken And Broccoli Au Gratin
- 1/4 c. margarine
- 1/4 c. chopped onion
- 1/4 c. flour
- 1 tsp. salt
- 1/8 tsp. pepper
- 1 c. (4 oz.) Jack cheese, grated
- 1/2 tsp. curry powder (optional)
- 1 (4 oz.) can mushrooms
- 1 can evaporated milk
- 1 (10 oz.) pkg. broccoli spears, cooked
- 1 chicken, cooked and cut up or 3 to 4 breasts
- Saute onions in butter.
- Add flour, salt, pepper and curry powder.
- Drain mushrooms (save liquid); add water to make 1/2 cup. Stir into flour mixture.
- Blend in milk.
- Add mushrooms.
- Cook and stir until sauce thickens.
- Arrange broccoli and chicken in bottom of 9 x 13 inch dish.
- Pour sauce over top.
- Sprinkle on grated cheese.
- Bake 20 minutes at 375u0b0 until bubbly at edges. Cool 15 minutes.
- Serves 6.
