Apple Nut Muffins
- 1/4 c. chopped pecans or walnuts
- 2 Tbsp. sugar
- 1 Tbsp. packed brown sugar
- 1/2 tsp. ground cinnamon
- 1 1/2 c. all-purpose flour
- 1/3 c. packed brown sugar
- 1 Tbsp. baking powder
- 1/2 tsp. ground cinnamon
- 1/2 tsp. salt
- 1 beaten egg
- 3/4 c. milk
- 1/3 c. margarine or butter, melted
- 1 medium apple, chopped
- Combine nuts, sugar, 1 tablespoon brown sugar and 1/2 teaspoon cinnamon.
- Combine flour, 1/3 cup brown sugar, baking powder, 1/2 teaspoon cinnamon and salt.
- Make a well in the center.
- Combine egg, milk and margarine; add to flour mixture.
- Stir until moistened.
- Fold in apple.
- Lightly grease 12 muffin cups or line with paper bake cups; fill 2/3 full.
- Sprinkle with nut mixture. Bake in a 400u0b0 oven for 20 minutes.
- Remove from pans.
