Smoked Caribbean Chicken
- 2 lb chicken legs or thighs
- 2 cup pineapple juice
- 1 cup soy sauce
- 1 cup molasses
- 1/4 cup spiced rum
- 2 tbsp lemon juice
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp powdered ginger
- 1/2 tsp nutmeg
- 1/4 tsp ground allspice
- Mix the ingredients of the marinade and marinate the chicken overnight.
- Set up your grill for Indirect Heat with a drip pan in the middle.
- Place chicken on the grill over the drip pan and add wet apple wood chips directly to the hot coals.
- Cook for about one hour and 15 minutes to an hour and 30 minutes.
- Maintaining a temperature of about 350F.
- When chicken reaches an internal temperature of 170F remove from grill and let rest for about 10 minutes before serving.
