Mom'S Patio Casserole
- 1 (8 oz.) pkg. wide noodles
- 2 Tbsp. butter or margarine
- 2 lb. lean ground beef
- 2 (8 oz.) cans tomato sauce
- 1/4 c. ketchup
- 2 Tbsp. flour
- 1 tsp. salt (optional)
- 2 c. cottage cheese (regular or nonfat)
- 1 c. sour cream (regular or nonfat)
- 1 tsp. salt (optional)
- 1/2 c. green onions, chopped
- 1/4 c. ripe olives, chopped
- 2 Tbsp. green pepper, chopped
- Cook noodles; drain.
- Melt butter or margarine.
- Brown meat, breaking into bite size pieces; drain.
- Add tomato sauce, ketchup, flour and salt.
- Simmer 10 minutes over low heat.
- In separate bowl, mix cottage cheese, sour cream, salt and vegetables.
- Place 1/2 noodles in a 9 x 13-inch pan.
- Cover with cottage cheese mixture.
- Top with rest of noodles.
- Finally, spread meat mixture over noodles.
- Bake at 350u0b0 for 30 minutes.
- Let set 10 minutes before cutting.
- Makes 12 hearty servings.
