Cabbage Slaw

  1. Using a sharp knife, peel the grapefruit and mandarin oranges, removing all of the bitter white pith.
  2. Working over a large bowl, cut in between the membranes and release the sections into the bowl.
  3. Squeeze the juice from the grapefruit into the bowl; you will need 1/4 cup.
  4. Add the kumquats, brussels sprouts, olives, dates and olive oil and season with salt and pepper; toss to evenly coat.
  5. Serve.
