Sunday Gumbo
- 1 lb. boneless skinless chicken breast, cubed
- 3 Tbsp. olive oil
- 1 medium onion
- 3 celery ribs, chopped
- 1 tsp. marjoram
- 1 tsp. thyme
- 1/2 tsp. garlic powder
- 1/2 tsp. cayenne
- 3 (14 1/2 oz.) cans chicken broth
- 2/3 c. uncooked brown rice
- 1 (14 1/2 oz.) can diced tomatoes
- 1 lb. medium shrimp, peeled and deveined
- 2 c. frozen sliced okra
- In Dutch oven, brown chicken in oil. Remove with slotted spoon and keep warm. In drippings, saute onion and celery until tender. Stir in seasonings, broth, rice and chicken; bring to a boil. Reduce heat; cover and simmer 20 to 30 minutes or until rice is tender. Stir in tomatoes, shrimp and okra. Cook 10 minutes or until the shrimp turn pink, stirring occasionally.
