Apple Baked Squash
- 1 medium butternut squash
- 3 medium apples
- 1/4 c. brown sugar
- 1/4 c. margarine, softened
- 1 1/2 tsp. flour
- 1/2 tsp. salt
- 1/4 tsp. cinnamon
- Mix the brown sugar, margarine, flour, salt and cinnamon together until well mixed and set aside.
- Peel and slice the squash and apples into thin (1/8 inch or less) slices.
- Alternate layers of squash, then apples in a 1 1/2-quart covered baking dish until half of the squash and apples are used.
- Spread less than half of the brown sugar mixture on top of the squash-apple layers. Continue to alternate the squash and apples until each is used up.
- Top with remaining brown sugar mixture.
- Cover and cook in microwave on High for 30 minutes.
- Let stand for 10 minutes, or bake at 350u0b0 for 1 hour and 15 minutes.
