Texas Chili
- 2 lbs 90% lean ground beef
- 3 cups onions, chopped
- 3 serrano chilies, chopped
- 2 cups green peppers, chopped
- 16 ounces kidney beans
- 3 tablespoons chili powder
- 1 teaspoon garlic powder
- 2 teaspoons cumin
- 2 teaspoons oregano
- 12 teaspoon red pepper
- 23 cup masa harina
- 29 ounces beef broth
- 32 ounces canned stewed tomatoes, undrained
- 24 ounces dark beer
- 23 teaspoon salt
- 12 teaspoon hot sauce
- 4 tablespoons lemon juice
- Cook meat until brown.
- Drain and set aside.
- Drain and rinse kidney beans.
- Drain and set aside.
- In a large stock pot, saute onion, bell pepper, and chilies in oil until tender.
- Combine meat, beans, vegetables, chili powder, cumin, oregano, garlic, and red pepper.
- Mix well.
- Sprinkle mixture with Masa Harina.
- Mix well.
- Add tomatoes, beer, salt, hot sauce, and beef broth.
- Bring to a boil.
- Simmer over medium heat for 1 1/2 hours, stirring often.
- Add lemon juice and simmer for 30 minutes.
