Blueberry Oat Bread/Muffins
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1 cup rolled oats
- 34 cup sugar
- 1 12 teaspoons baking powder
- 12 teaspoon baking soda
- 14 teaspoon salt
- 14 teaspoon allspice
- 34 cup low-fat milk
- 13 cup melted butter
- 2 eggs
- 1 14 cups frozen blueberries or 1 14 cups frozen mixed berries
- Combine dry ingredients in large mixing bowl.
- add milk, butter and eggs.
- mix just until moistened.
- gently stir in berries.
- spoon batter into 9x5x3 inch loaf pan that has been greased on the bottom only.
- bake at 350F for 55-65 minutes.
- cool in pan 10 minutes.
- remove from pan and cool completely on wire rack.
- can also be made into muffins-bake 20-25 minutes.
