Mom T's Refrigerator Bran Muffins

  1. Cream butter and sugar.
  2. Add beaten eggs and buttermilk to butter mixture.
  3. Mix together and let stand a minute the All Bran (pellets) and the boiling water.
  4. Set aside.
  5. Mix dry ingredients, flour, soda and salt.
  6. Add choice of fruit.
  7. Set aside.
  8. Add soaked All Bran to creamed mixture.
  9. Add dry ingredients to this.
  10. Add the All Bran (long type) and stir slightly until mixed.
  11. Let stand in refrigerator 24 hours.
  12. When ready to use stir and then bake in greased muffin pan for appoximately 20 minutes at 400 degrees.
  13. Store extra batter in airtight container in refrigerator.
