Angel Food Supreme

  1. Preheat oven to 350u0b0.
  2. Have ready an ungreased tube pan.
  3. Sift and measure flour and first amount of sugar together.
  4. Measure egg whites, cream of tartar and salt into a large mixing bowl.
  5. Beat until foamy; gradually add second amount of sugar, a small amount at a time.
  6. Continue beating until meringue holds stiff peaks. Fold in flavoring; sprinkle sugar and flour mixture over meringue. Fold in gently, just until flour disappears.
  7. Push batter into tube pan.
  8. Cut gently through batter with spatula.
  9. Bake 30 to 35 minutes.
  10. Remove from oven.
  11. Invert on a large heavy bottle and let stand for 1 hour.
  12. Turn right side up.
  13. Slide knife gently around sides of pan and turn out onto serving plate.
