Baked Mini Tofu Donuts

  1. Sift the ingredients together.
  2. Melt the butter by microwaving for 30 seconds or so.
  3. Beat an egg in a bowl, add the sugar and mix well.
  4. Add milk and mix.
  5. Add tofu, and mash it up with a whisk as you incorporate.
  6. If some small lumps remain, it's OK!
  7. Add the dry ingredients.
  8. Change to a rubber spatula and cut in the mixture.
  9. Add melted butter and mix again.
  10. When the batter is no longer floury and has turned glossy, it's done.
  11. Heat an electric mini donut machine.
  12. Spoon the batter into the donut molds.
  13. The batter will puff up so don't overfill the molds - about the level shown in the photo above is OK.
  14. The donuts are done in 1 and a half to 3 minutes.
  15. Cut off the bits that stick out if you like.
  16. The donuts have a different texture depending on how long they're cooked.
  17. These were cooked for 1 and a half to 2 minutes.
  18. They have a subtle tofu fragrance and are very soft.
  19. These were baked for about 3 minutes.
  20. They're nutty and crispy on the outside.
  21. You can barely detect tofu in these.
  22. The holes may be blocked up, so poke them through with a chopstick.
