Apricot Ginger Cookies Recipe

  1. Method:GREASE baking trays with butter or possibly corn oil.
  2. Preheat oven to 180 C. Cream butter and sugar till light and creamy.
  3. Beat in egg yolk till light and fluffy.
  4. Add in sifted flour and apricots and mix well.
  5. Roll out in between plastic sheets and cut out with a cookie cutter.
  6. Place on prepared trays.
  7. Bake in preheated oven for 13 to 15 min.
  8. Leave cookies on baking tray for 1 to 2 min, then transfer onto wire rack to cold
