Gluten Free Pancakes
- 38 cup gluten-free flour (such as Bob's Red Mill)
- 18 cup sweet rice flour
- 1 teaspoon baking powder
- 12 teaspoon salt
- 1 tablespoon sugar
- 18 teaspoon xanthan gum
- 1 teaspoon safflower oil
- 14-12 cup water (to desired consistency)
- nonstick cooking spray
- Combine all ingredients in small bowl.
- Mix well.
- Let stand for 5 minutes.
- Spray medium heat griddle with cooking spray.
- Pour scant 2 tablespoons batter onto griddle.
- Turn when edges begin to dry.
- Remove from heat when cooked through.
- Serve with maple syrup, berries or dust with powdered sugar.
