Hazelnut Plum Cake
- 1 1/3 c. unsifted all-purpose flour
- 3/4 c. sugar
- 2 tsp. baking powder
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 10 Tbsp. butter, coarsely chopped
- 3 large eggs, lightly beaten
- 2 Tbsp. grated orange rind
- 1 tsp. vanilla
- 5 red plums, ripe and halved
- 2/3 c. coarsely chopped, skinned, toasted hazelnuts
- Heat oven to 350u0b0.
- Grease and flour 8-inch spring-form pan. In food processor fitted with chopping blade or in large mixer bowl, combine flour, sugar, baking powder, cinnamon and salt. Process or stir until just blended.
- Add butter, process briefly until just blended.
- Add eggs, rind and vanilla; process just until smooth batter forms.
- Scrape inside of bowl as necessary.
- Spread half of batter in prepared pan and bake 25 minutes.
