Beef Tortini Recipe
- 3 lbs. grnd beef
- 1 lg. onion, minced
- 3 c. tomato sauce
- 2 lg. cans (12 ounce.) tomato paste
- 4 Packages frzn spinach, thawed
- 1 pound (4 c.) shredded Mozzarella cheese
- 1 pound (4 c.) sliced mushrooms
- 2 lbs. cottage cheese or possibly 1/2 ricotta & 1/2 cottage cheese
- Saute/fry beef and onion till beef is browned, then drain off fat.
- Add in tomato paste and sauce and simmer for about 1/2 hour, till juices thicken.
- Mix spinach and cottage cheese.
- Put 1/3 the meat in large, 12"x18", lasagna pan or possibly 2 (9"x13").
- Add in half the spinach mix then another 1/3 of the meat, etc.
- till you use everything up.
- Top with Mozzarella and mushrooms and bake at 325 degrees for 1/2 hour.
