Pizza Panini
- 8 ounces, weight Mushrooms, Sliced
- 1/2 whole Green Pepper, Chopped
- 1/2 Tablespoons Butter, Plus More For The Bread
- 8 slices Panini Bread
- 3- 1/4 ounces, weight Pizza Sauce
- 12 slices Pepperoni
- 1 cup Mozzarella, Shredded
- Preheat your panini press according to manufacturers instructions.
- In a saute pan on medium low heat saute mushrooms and green peppers in 1/2 tablespoon of butter until tender, about 5-7 minutes.
- Remove pan from heat.
- Butter the outside of the bread slices and place on a cutting board (butter side down).
- On the un-buttered side of each slice, spread a small amount of pizza sauce.
- On half of the slices add 3 slices of pepperoni and 1/4 cup of cheese.
- Top that with 1/4 of the mushrooms and green peppers.
- Add the top slice of bread (butter side up) and cook one sandwich on the panini press for 4-5 minutes or until browned on the outside and heated through.
- Repeat for remaining sandwiches and serve immediately.
