Roasted Capsicum, Eggplant & Prosciutto Pizzas
- 4 small pizza bases (20cm diameter)
- 1/2 cup eggplant dip Safeway 1 ea For $1.28 thru 02/09
- 1 cup grated mozzarella cheese, firmly packed
- 2 roasted capsicum fillets, sliced
- 1 red onion, thinly sliced
- 6 thin slices prosciutto, cut into smaller strips
- 80g Greek feta, crumbled
- 40g baby rocket leaves, tossed in
- 2 teaspoons extra virgin olive oil and
- 2 teaspoons lemon juice
- Spread eggplant dip over pizza bases.
- Sprinkle with half the mozzarella, then top with capsicum, onion, prosciutto, feta and remaining mozzarella.
- Bake pizzas in a hot oven 220C for 10 minutes, or until just golden.
- Scatter with dressed rocket and serve immediately.
