Roasted Capsicum, Eggplant & Prosciutto Pizzas

  1. Spread eggplant dip over pizza bases.
  2. Sprinkle with half the mozzarella, then top with capsicum, onion, prosciutto, feta and remaining mozzarella.
  3. Bake pizzas in a hot oven 220C for 10 minutes, or until just golden.
  4. Scatter with dressed rocket and serve immediately.
