Billy Bowman's BBQ Ribs

  1. Mix the pineapple juice, orange juice, and honey in a large container.
  2. Marinate the ribs in this mixture for 6 hours.
  3. Sprinkle the ribs heavily with Everglades Seasoning.
  4. Smoke the ribs over indirect heat for 2 to 3 hours.
  5. Cook's Notes: The ribs should not cook over direct heat because drippings could spark a fire and overcook the ribs.
  6. The coals should be to 1 side of the grill, the ribs to the other side.
  7. Billy Bowman prefers wet wood chips to give a smoked flavor.
