Quick and Easy Shrimp Penne

  1. Cook pasta in boiling water.
  2. While pasta is cooking, heat olive oil in large skillet.
  3. Saute garlic for one minute, add eggplant and zucchini, saute for 5 minutes or until golden brown.
  4. Add chopped tomatoes and saute an additional 2 minutes.
  5. Add shrimp and cook for 2 - 3 minutes.
  6. Drain pasta, reserving 1/2 cup cooking liquid.
  7. Add both to the skillet, toss all ingredients together.
  8. Top with basil.
  9. Add fresh ground pepper to taste.
