Cheesy Corny Bites
- 8 ounces, weight Cream Cheese, At Room Temperature
- 1 cup Shredded Pepper Jack Or Cheddar (or A Combination Of Both)
- 1 whole Egg
- 1/2 cups Or More Frozen Corn Kernels (I Like A Lot Of Corn)
- 48 pieces Tostito's Scoops
- 48 pieces Black Olive Slices
- 3 Tablespoons Chives, Chopped
- Preheat oven to 350 degrees F.
- In a large bowl, mix the cream cheese, shredded cheese, egg, and corn.
- Arrange the chips on a large rimmed baking sheet and fill each with approximately 1 teaspoon of the corn mixture.
- Top each with a slice of olive.
- Bake until the filling sets, about 20 minutes.
- Sprinkle the corn bites with chives and serve warm.
