Tia'S Flan
- 2/3 c. sugar
- 6 egg yolks
- 2 whole eggs
- 2 cans condensed sweetened milk
- 2 cans evaporated milk
- 1 1/2 tsp. vanilla or juice of 1 orange or lemon or lime "zest optional"
- In a saucepan over medium-high heat, melt 2/3 cup of sugar. Have patience and keep stirring.
- All lumps will dissolve with time.
- Coat a pan of your choice (could be a Pyrex in an interesting shape or a smooth Bundt pan.
- I use a simple stainless steel mixing bowl so that is comes out round) with the melted sugar.
- Coat the pan well!!
- In a small bowl, whisk 6 egg yolks and 2 whole eggs.
- In a large bowl, combine 2 cans of condensed sweetened milk with 2 cans of the evaporated milk.
- Add the eggs. At this time, add vanilla.
- Pour mixture into prepared pan.
- Take a roasting pan.
- Pour 2-inches of water into it and set the flan in the middle.
- Bake your flan in an oven that has been preheated to 350u0b0.
- This can take anywhere from 1 to 2 hours depending on your oven.
- Test your flan for doneness with a toothpick inserted into the middle.
- It's ready when it comes clean.
- Carefully remove your flan by lifting the bowl out of the pan.
- Chill well (6 hours minimum, you can make it the night before).
- To remove slide a butter knife around the edge.
- Invert the pan onto your serving plate (a large plate or a plate with a lip).
- Remember the caramel runs off.
- Get all of it on the plate.
- Yields 12 servings.
