BOCA Essentials Roasted Vegetable & Red Quinoa Burgers with Marinated Onions, Cucumbers & Feta

  1. Mix vinegar, sugar and oregano in bowl.
  2. Add cucumbers and onions; toss to coat.
  3. Let stand 15 min.
  4. Drain.
  5. Cook burgers on well-oiled 350 degrees F griddle or flat-top grill 8 to 10 min.
  6. or until internal temperature registers 160 degrees F, turning halfway.
  7. Fill each bun with 1/3 cup marinated vegetables, 1 burger and 1 Tbsp.
