Queso Blanco Dip

  1. In skillet, cook chorizo until fully cooked.
  2. In large microwave safe bowl, combine beer and Velveeta (cut into chunks).
  3. Microwave in 1 minute increments until cheese is fully melted and mixes easily with the beer.
  4. Add meat and Rotel to cheese and mix well.
  5. Serve in crock-pot to keep warm.
  6. Serve with bread or tortilla chips.
