Bacon Corn Pancakes

  1. Preheat griddle or skillet to medium-high heat.
  2. Pour boiling water over cornmeal.
  3. Set aside.
  4. Combine pancake mix and 1 cup water, beating til smooth.
  5. Add cornmeal mixture.
  6. Stir well.
  7. Add remaining ingredients.
  8. Cook pancakes, using about 1/4 cup of batter each.
  9. Flip over and cook on the other side.
  10. Keep warm til time to serve.
  11. Excellent with salsa and sour cream.
