Butternut Squash Pancakes

  1. puree squash with water until smooth
  2. in mixing bowl add pancake mix, cinnamon, and vanilla
  3. slowly add squash puree while mixing on low
  4. in skillet heat oil on medium heat
  5. using ice cream scoop, place batter in pan and smooth out into circle
  6. cook each side 6-7 minutes until golden brown
  7. serve with syrup, apple pie filling, or plain
