Mediterranean Chicken Salad
- boneless skinless chicken breasts
- gal. yellow peppers, quartered, seeded Target 1 pkg For $2.99 thru 02/06
- gal. red peppers, quartered, seeded
- qt. KRAFT Signature Sun Dried Tomato Oregano Dressing, divided
- gal. Romaine lettuce, torn or cut into 1-inch pieces
- qt. canned pitted black olives, drained
- qt. Crumbled feta cheese
- Grill chicken and peppers until chicken is cooked through and peppers are tender, turning and brushing occasionally with dressing (using 1-1/4 cups dressing for each pound of chicken used) .
- Cut chicken into diagonal slices; cut peppers into 1/4-inch-wide strips.
- For each serving: Place 2 cups lettuce on serving plate.
- Top with 1/2 cup chicken, 3/4 cup mixed pepper strips and 1/4 cup olives; sprinkle with 2 Tbsp.
- cheese.
- Serve with 2 Tbsp.
