Italian Pork Chops
- 4 (1-inch) thick chops
- seasoning salt and pepper
- 1/2 lb. small mushrooms (optional) or 1 can mushroom pieces
- 1 Tbsp. salad oil
- 1 medium onion, chopped
- 1/2 clove garlic, sliced
- 2 large green peppers, cut in strips
- 2 (8 oz.) cans tomato sauce
- 1/2 bay leaf
- 1 Tbsp. lemon juice
- 1/8 tsp. dried sage
- Preheat oven to 375u0b0.
- Trim chops of excess fat.
- Sprinkle with seasoning salt and pepper.
- Saute until brown in pan, draining fat as it collects.
- Place chops in 2 1/2-quart casserole dish. Arrange mushrooms around chops.
- Set aside.
- In another skillet, saute in salad oil the onions, garlic and pepper strips until golden brown.
- Add tomato sauce, salt, pepper, bay leaf, lemon juice and sage.
- Simmer covered until vegetables are fork-tender. Pour sauce over chops and bake 1 hour covered.
