Lemon Minted Sugar Cookies

  1. Heat oven to 350F.
  2. Combine 1 cup sugar, butter, shortening and egg in bowl.
  3. Beat at medium speed, scraping bowl often, until creamy.
  4. Add flour, cream of tartar and baking soda; beat at low speed until well mixed.
  5. Stir in lemon zest and mint.
  6. Place additional sugar in another bowl.
  7. Shape rounded teaspoonfuls of dough into 1-inch balls; roll in sugar.
  8. Place 1 inch apart onto ungreased cookie sheets.
  9. Bake 10-12 minutes or until edges are very lightly browned.
