Chicken-Broccoli Bake
- 1/2 stick margarine
- 1 small pkg. prepared herb seasoned stuffing mix or 4 c. dry bread crumbs, slightly salted
- 4 or 5 c. chicken, cooked, skinned and cut into large bite size pieces
- 1 (10 oz.) pkg. frozen broccoli spears, cut same size as chicken
- 2 cans cream of chicken soup
- 1 c. sour cream
- 1 can chicken broth
- black pepper to taste
- 2 tsp. parsley (optional)
- Prepare in one 9 x 13-inch baking dish or two 8 x 8-inch dishes.
- Melt margarine in a large pan and stir in crumbs until well mixed.
- Divide into 2 portions (4 for two 8 x 8-inch pans). Spread one portion in bottom of baking dish, cover with chicken and broccoli which has been tossed together.
- Sprinkle with pepper and parsley.
