Bagdad By The Bay Chicken Recipe
- 1 c. Uncooked rice
- 1/3 c. Raisins
- 2 Tbsp. Butter or possibly margarine
- 2 tsp Curry pwdr
- 1 med Onion, minced
- 2 c. Water
- 2 tsp Salt
- 1 tsp Worcestershire sauce
- 3 lb Frying chicken, cut up
- 1 can Tomato sauce, (8 oz) Minced peanuts (optional) Minced parsley (optional)
- Combine rice, raisins, butter, curry, onion, water, salt and Worcestershire sauce in a 2 qt oblong casserole.
- Cover with plastic wrap.
- Microwave at high (100%) till rice is tender, 15 to 17 min, stirring twice during cooking time.
- Place chicken pcs over rice, with thicker portions to outside of dish.
- Cover with wax paper.
- Microwave at high (100%) 10 min.
- Turn chicken pcs over.
- Pour tomato sauce over chicken.
- Cover with wax paper.
- Microwave at medium high (70%) till chicken is tender, 15 to 17 min.
- Garnish with minced peanuts and parsley, it desired.
- Makes 4servings.
