Pork Roast and French Fry Po' Boy

  1. Heat oil in a deep-fryer to 360 degrees.
  2. Fry potatoes until brown and crunchy, 8 to 10 minutes.
  3. Slice open bread.
  4. Spread with mayonnaise and fill with lettuce and tomato.
  5. Fill with pulled pork and top with french fries.
  6. Open a beer.
  7. Eat, drink, dance to the Funky Meters and enjoy the Fest.
