Cube Steak Rolls-Italian Style(Serves 8)
- 8 cube steaks
- 1/2 lb. fresh mushrooms
- 2 Tbsp. oil
- 1/4 c. minced parsley
- pepper
- 4 green onions, sliced (white and green part)
- 1/2 c. grated Parmesan cheese
- salt
- 1 lb. can tomatoes
- 1 Tbsp. cornstarch
- 2 Tbsp. water
- Season the 8 steaks with salt and pepper. Clean mushrooms. Chop fine.
- Saute in 2 tablespoons of oil for a few minutes. Remove from heat. Mince parsley, slice onions and add cheese.
- Add to mushrooms and mix.
- Evenly divide mix over 8 steaks and spread out.
- Roll steaks and tie with string. Brown on all sides in oil. Drain off the excess oil. Pour tomatoes over rolls.
- Cover and simmer for 30 minutes or until
- meat is tender.
- Put meat on platter (heated).
- Blend cornstarch with water.
- Add to tomato mix.
- Cook until thickened.
- Pour over meat.
- Serve with pasta or rice.
