Mustard-Apricot Glazed Tilapia with Vegetable Couscous

  1. Heat oven to 425 degrees F.
  2. Heat oil in large skillet on medium heat.
  3. Add mushrooms and onions; cook and stir 5 min.
  4. Add couscous; cook and stir 1 min.
  5. Stir in broccoli and broth.
  6. Bring to boil; cover.
  7. Simmer 8 min.
  8. or until liquid is absorbed.
  9. Meanwhile, place fish in shallow pan sprayed with cooking spray.
  10. Mix preserves and mustard; spread over fish.
  11. Bake 10 min.
  12. or until fish flakes easily with fork.
  13. Stir Parmesan into couscous mixture.
  14. Serve topped with fish and cilantro.
