Ravioli With Apples, Bacon, & Spinach

  1. Cook ravioli according to package directions.
  2. Cook the bacon in a skillet over medium heat until crisp, 6-8 minutes.
  3. Transfer to paper-towel lined plate to drain.
  4. Break into pieces when cool.
  5. Wipe out the skillet; heat the oil over medium heat.
  6. Add the garlic; cook stirring occationally, until golden brown, 1 to 2 minutes.
  7. Add the apple; cook, stirring, for 1 minute.
  8. Add the spinach, salt, and pepper.
  9. Cook, tossing, until the spinach begins to wilt, 1 to 2 minutes.
  10. Fold in the lemon juice and bacon.
  11. Serve over the ravioli.
