Oven BBQ Brisket

  1. Heat oven to 325F.
  2. Place meat, fat-side up in roasting pan; top with onions and barbecue sauce.
  3. Cover.
  4. Bake 2 hours.
  5. Scatter potatoes and carrots around meat.
  6. Bake, covered, 1 hour or until meat is done (160F).
  7. Use slotted spoon to transfer potatoes and carrots to serving bowl; cover to keep warm.
  8. Transfer meat to carving board, reserving sauce and onions in pan.
  9. Cover meat to keep warm.
  10. Skim fat from reserved sauce; discard.
  11. Pour sauce and onions into saucepan; bring to boil on high heat.
  12. Simmer on medium-low heat 5 min.
  13. or until slightly thickened, stirring occasionally.
  14. Carve meat across the grain into thin slices.
  15. Serve with vegetables and sauce.
