Chicken Breasts With Herbs

  1. In a bowl, stir together parsley, oregano, lemon peel and garlic.
  2. Set aside.
  3. Season chicken with salt and pepper.
  4. heat skillet to medium high heat.
  5. Cook chicken 3 minutes on each side in butter.
  6. Transfer to plate.
  7. Remove skillet from heat.
  8. Stir in half herb mixture.
  9. Return to heat, add broth and bring to a boil.
  10. Stir to scrape up bits from the bottom.
  11. return chicken to pan, reduce heat and simmer, covered for 8 minutes or until chicken is no longer pink.
  12. Serve with pan sauce.
  13. sprinkle with remaining herb mixture.
