Pork and Mango Salad (Betty Crocker)

  1. Cut mango in half and peel.
  2. Mash enough mango to measure 1/4 cu; cut remaining mango into thin slices.
  3. Mix mashed mango, yogurt, sugar, and ginger.
  4. Place 1 cup of lettuce on each of 4 salad plates.
  5. Arrange mango slices, pork, oranges, and avocado on lettuce.
  6. Top each salad with the mango dressing mixture.
