Ham and Cheese Scones Recipe

  1. Heat the oven to 400 degrees F and arrange a rack in the middle.
  2. Line a large rimmed baking sheet with parchment paper.
  3. In a food processor, combine the flour, baking powder, baking soda, and salt and pulse briefly to mix.
  4. Add the butter and pulse until its in the size of small peas.
  5. In a small bowl, whisk together the egg and buttermilk, then pour the mixture into the processor and pulse just until the dough comes together.
  6. Add the cheese and pulse a few times to mix.
  7. Turn the dough out onto a lightly floured work surface.
  8. Sprinkle the dough with the ham and knead it gently into the dough.
  9. Press the dough into a 1/2-inch-thick rectangle.
  10. Using a large, sharp knife, cut the dough into 9 equal squares/rectangles.
  11. Transfer the scones to the prepared baking sheet, spacing them evenly.
  12. Sprinkle each with a little cheese, if you like.
  13. Bake until golden, about 12 minutes.
  14. Transfer to a wire rack and let cool slightly before serving with plenty of butter.
