Vidalia Onion And Rice Casserole
- 2 tbsp butter
- 1 medium Vidalia onion
- 1 pinch cayenne pepper
- 1 cup milk
- 2 eggs
- 2 cup extra sharp cheddar cheese, shredded, plus more for top
- 4 cup cooked rice
- 1 tsp fresh thyme, chopped
- 1 tsp basil, chopped
- 1 tsp fresh parsley choppef
- 1 salt & freshly ground pepper to taste
- 1 packages spinach, thawed, drained,
- Preheat oven to 350F.
- Butter a large casserole dish.
- In a large pan over medium/high heat, saute onions with 2 tablespoons butter and cayenne until translucent.
- Add spinach and cook for 3 minutes.
- Set aside.
- In a large bowl, whisk together milk and eggs.
- Add the cheese, rice, parsley, thyme, basil and spinach mixture.
- Combine well and season with salt and pepper.
