Vidalia Onion And Rice Casserole

  1. Preheat oven to 350F.
  2. Butter a large casserole dish.
  3. In a large pan over medium/high heat, saute onions with 2 tablespoons butter and cayenne until translucent.
  4. Add spinach and cook for 3 minutes.
  5. Set aside.
  6. In a large bowl, whisk together milk and eggs.
  7. Add the cheese, rice, parsley, thyme, basil and spinach mixture.
  8. Combine well and season with salt and pepper.
