Veal Mushrooms Marsala Recipe

  1. Mix flour, salt, and pepper together.
  2. Dredge cutlets well.
  3. Heat extra virgin olive oil in heavy skillet over medium heat.
  4. Add in veal, cook about 3 min on each side; drain.
  5. Add in mushrooms to skillet; saute/fry till tender.
  6. Remove from skillet.
  7. Saute/fry green onion in 2 Tbsp.
  8. oil.
  9. Stir in peeled, seeded, minced tomatoes and basil.
  10. Cook 4 to 5 min till most of liquid is evaporated.
  11. Add in marsala wine, simmer 8 min.
  12. Return veal to skillet, heat thoroughly.
  13. To serve, sprinkle with Parmesan cheese and parsley.
